Candy Bar Explosion Peanut Butter Cookies

Today in Atlanta we had some snow and icy roads. The kids and I really wanted to go out and get some sweets but decided to stay home and make peanut butter cookies instead. Mm!

We also had a lot of leftover Halloween candy and a half eaten bar of dark chocolate. So I chopped up the dark chocolate, a handful of fun sized Butterfingers and Milky Ways, a couple of Reese's cups and an oversized Hershey Kiss and added them into the cookie dough. 


The result was a chocolatey, chewy and caramelized bits of crunch from the Butterfinger and caramel in each warm cookie bite. Yum!



1/2 cup of butter at room temperature

3/4 cup brown sugar

1/4 cup granulated sugar

1/2 cup creamy peanut butter (preferably something like Peter Pan or JIF and not "all natural")

1 tsp of vanilla extract

1 large egg

2.5 cups of all purpose flour

1 tsp of baking soda

1 tsp of fine sea salt

2/3 cup of chopped of chocolate candy bars of choice

Preheat oven to 350 degrees.

Combine butter, peanut butter and sugars in a mixing bowl and whip until the mixture is creamy and fluffy. Add in egg and whip until just incorporated. Mix in vanilla extract and salt.

Add  flour and baking soda and mix in batter until just incorporated. Fold in chocolate candy with a spatula.

Form dough into balls slightly flattened on the top and chill in freezer for 10 minutes. Bake cookies on a cookie sheet lined with wax paper for 10 to 15 minutes or until golden brown. After removing from the oven, let the cookies cool on the sheet. About 5 minutes or as long as your patience will allow. :)
