Cinnamon & Choco Chip Waffles
As usual for Saturday mornings, I went straight to the kitchen pantry to see what I can make for a sweet breakfast treat. I have this super cute mini waffle maker from Dash (not a sponsored post- I wish) but I ran out of vanilla extract!
I decided to add some flavor to my waffle batter with the help of freshly zested cinnamon and semi-sweet chocolate chips instead. If you have vanilla extract though, do add some! A teaspoon or two should do it.
To add some of that extra fluffiness, I whipped up a simple merengue and added it into my batter. Sometimes just going that extra mile goes a long way. We devoured these with an extra pat of warm butter, banana slices and a little powdered sugar... but you do you. <3
- 4 egg whites
- 2 egg yolks
- 1 and 1/3 cup whole milk
- 4 tablespoons of melted unsalted butter
- 3 tablespoons vegetable oil
- 1/4 cup granulated sugar
- 1 teaspoon fine sea salt
- 2 cups of all purpose flour
- 1 tablespoon baking powder
- fresh cinnamon zest
- 2/3 cup semi-sweet chocolate chips (but the amount is really up to you)
Turn on your waffle maker.
Beat egg whites on high speed until the mixture makes stiff peaks. This should only take about 3 to 4 minutes. Set aside. Viola, merengue.
Combine yolks, milk, butter, oil and sugar and mix well. Stop the mixer. Add in flour, baking powder and salt and mix batter until just incorporated.
Fold in merengue gently with a spatula until your batter is fairly smooth and large lumps of merengue have disappeared.
Spray waffle maker with cooking oil (I used coconut oil) and cook waffles on the settings according to your machine. Enjoy!
